Avocado, Egg, and Pasta Salad


About the Recipe 
I recently started enjoying avocados.  In fact I had not tried 1 until quiet recently.  I am attempting to modify my diet to include healthy fats, such as that comes from this SUPER fruit.  So I will interject avocado into many of recipes now.  

Recipe
Using 1 hard boiled egg that's been chopped up as finely as you prefer, add avocado paste, then 1 teaspoon of mayo.  Once those 2 main ingredients are fully integrated, add left over cooked pasta of your liking.  I used multi colored pasta for mainly this pictures sake.  Normally I prefer to use healthier pasta but the picture above would of looked so white.

Mind you, you can add shredded carrots, beets, blanched sweet potatoes for color,   I sometimes like to blanch broccoli & then shred off the tops of it as a final garnish.  Unfortunately I didn't have any of the other produce products on hand.

Price of the Meal
Doz Eggs = $3.50 so 1 egg approx 30 cents
Avocado $1.50
Mayo = jar $4.00 so 1 teaspoon approx 5 cents
Pasta $2.10 = 1b. can be used 4 meals so 51 cents
Utility needed - $1.00 (inc. gas & elec.)
1 meal = approx $3.35



Prep and Cook Time
Boiling Eggs - 10 mins tops for Jumbo
Boiling Pasta - 8 minutes 



Tip of the Day 
When boiling pasta; especially in the summer months, it's best to boil the whole 1 lb. box/bag.  Separate the pound of cooked pasta into 2 or 4 small seal-able plastic bags.  (I'm only cooking for 2, so I usually do 4, 1/4 oz. baggie portions.)
Since the pasta is already cooked it can be added as a last minute to so many dishes.  Leaving it undressed (meaning sans butter, sauces, etc) is preferable.
