Cheese stuffed Corn Tortilla
About this Recipe
I make this for so, so many reasons. As a quick snack, as a side-starch for a main meal, or even for a party platter. My family enjoys this basic recipe for breakfast, lunch, dinner or even as a I mentioned before as a snack. They are so quick & easy to make too.
RECIPE
Very lightly grease a non-stick pan with butter.
Place tortilla(s) in the pan to lightly brown on 1 side.
When side facing up begins to form small bubbles, usually it's time to flip it.
While side 1 is browning, shred your favorite cheese.
After flipping the tortilla, place 1/2 oz. of shredded cheese on 1/2 of tortilla.
Fold tortilla over in 1/2. Brown both 1/2 sides of the tortilla.
Price of the Meal
1 extra thick corn tortilla - 12 cents
1/2 ounce cheese - 16 cents
butter - 5 cents
utility to cook - 50 cents
Total cost = 82 cents
Prep & Cook Time
Warm pan - 1 minute
Shredding cheese 1 minute
Browning of both sides of tortilla - 4 mins.
Total time = 5 minutes
TIP OF THE DAY
After cooking, let it cool approx. 1 min so that you can cut it without all the cheese just oozing completely out. Cut it quarters. Serve with a choice of dipping condiments such as salsa Verde, guacamole, spicy salsa, or even just sour cream.
